Easy Lasagna Soup

This easy lasagna soup went viral on TikTok and it is for good reason. It is SO good. And it is SO easy.

Brent loves lasagna and I haven't made lasagna in years because it is a bit too labor intensive in this season of life. So I was so happy that he loved this and I thought it was just as good as regular lasagna but so much easier. It will now go into our regular dinner rotation.

This makes a large pot of soup so you can easily half this if you want. But I wanted to use my whole pound of ground beef, sausage, and lasagna and make it all at once (and not have leftover ingredients). 

Though just like regular lasagna, it is great the day later. You can freeze it to save for later or share half with a friend. This is a perfect bowl of comfort for someone who might need a meal.


Lasagna Soup

2 tablespoons olive oil

2 medium onions (I just use frozen minced onions and eyeball it)

6-8 cloves garlic (I use minced garlic from the store)

1 lb ground beef

1 lb ground Italian sausage 

2 teaspoons salt

1 teaspoon pepper

1 tablespoon Italian seasoning 

2 tablespoons tomato paste

8 cups water

45-48 oz pasta sauce (this is 2 smaller jars or one jumbo jar)

1 lb lasagna noodles (dry and broken up into quarters)

2 cups heavy cream

2 cups shredded Parmesan (or 1 cup grated Parmesan) 

In a large pot, cook olive oil, onions, and garlic over medium high heat until onions are softened. Add ground beef and ground Italian sausage and cook until browned. Add remaining ingredients and cook on medium to low heat for 30 minutes or until pasta is cooked through (turn down the heat if it starts to boil). 

Notes:

- You can substitute the heavy cream with milk but it won't come out as thick and creamy. Still tasty though.

- To break up lasagna noodles, snap a couple in half and then in half again (quarters). You might have dry noodles fly away so do just a few at a time. You can even break them smaller if you want but if you get some big ones, they are easily cut through with a spoon when you are eating it.

- This is SO flavorful. The original recipe I found used chicken stock and I didn't find it necessary. Adding flavor with salt is easier for me than having stock on hand. It is a lot of water but trust it is plenty flavorful.
