I love any type of coffee ice cream but this combination of coffee and Oreos is an all time favorite! One of my favorite local ice cream shops makes this but they are only open in the spring and summer. It is very sad that I cannot get my favorite ice cream year around so I had to figure out a way to make it myself!
I use a very similar base for all my ice cream recipes that I adapted from my Cuisinart Ice Cream Maker. It is so fun to be able to have a go to recipe that I know I love and be able to change it to fit whatever flavor I am craving.

Coffee Cookie Ice Cream
1 cup whole milk
3/4 cup granulated sugar
2 tablespoons instant coffee or espresso powder (I use decaf instant)
2 cups heavy cream
1 teaspoon vanilla extract
15 Oreos broken into pieces (smashed)
In a medium bowl, whisk milk, sugar, and instant coffee until sugar and coffee is dissolved. Stir
in heavy cream and vanilla. Cover and refrigerate for about an hour, if time allows.
Pour mixture into ice cream maker and mix following manufacturer's instructions.
When ice cream is finished, mix together ice cream and Oreos in a large bowl. Transfer into freezer safe container.
For real ice cream consistency, freeze for about 2 hours before serving.
But if you can't wait, it is more like frozen yogurt and is just as
amazing in it's own way!
