Over the past few weeks I have been sharing recipes from the book Deceptively Delicious. This week’s recipe was tacos. The secret ingredient: carrot puree. Above you will see that the ground turkey, crushed tomatoes, taco seasoning, and carrot puree are cooked together for a beautiful delicious Mexican meal.

A little tip on cheese: I find that usually the biggest blocks of cheese are the most inexpensive to buy. So instead of shipping out more money for shredded cheese, I shred my own. It is a little time consuming, but by using my food processor to shred it all, I have little bags of cheese for the refrigerator and freezer for weeks to come.

My favorite part of the recipe? She suggests baking the tacos in the oven, stuffed with the ground turkey mix and cheese. {I stuffed little ramekins in there to help keep the tacos standing up straight}

And let me just tell you, crisp shells and oozing tacos are ah-may-zing!!!
