Cauliflower Mashed Potatoes...Really Are Delicious!


Cauliflower mashed potatoes are one of those things I have heard about but thought, "surely, that is too healthy to be delicious."  But despite my current judgments, I decided to give it a try.  And I am sure glad I did.  Because it is AMAZING.  I love mashed potatoes.  Easily in my top five favorite foods ever. So believe me when I say this stuff is good.

This recipe combines cauliflower with one potato and makes a creamy and delicious side dish that no one will know is packed full of veggies!  The key to it's creaminess is mixing the ingredients in a food processor after cooked.  This gets the cauliflower completely broken down so that you don't have any chunks.  Ready for your mind to be blown?!  Read on...


Cauliflower Mashed Potatoes Recipe 

1 large russet potato, pealed and cut into 1/2 inch pieces
4 cups fresh cauliflower florets
6 garlic cloves
1/4 cup non fat milk
1 tablespoon butter or margarine
salt and pepper to taste

Combine potatoes, cauliflower, and garlic in a large saucepan and cover with water.  Bring water to a boil over high heat.  Turn heat down to a simmer and let cook until tender, about 15 minutes.  Drain and then pour into food processor along with milk and butter.  Process until you get a creamy mashed potato texture.  Season with salt and pepper to taste.

Then eat your heart out!
