These are the easiest ice cream sandwiches ever and were a huge hit with my family. Technically you use whipped cream instead of ice cream, but I am telling you, it tastes just like ice cream. This is the easiest, wow your kids recipe, when you don't have the bandwidth or time for something fancier. Plus a really easy one to let the kids help as well.
Easiest Chocolate Chip Ice Cream Sandwiches
- Chips Ahoy or similar size cookies (they are the perfect size to fit in a muffin tin)
- whipped cream
- jumbo silicone muffin tin (this makes it easier to peel out the frozen whipped cream)
Place one cookie, top side down, in muffin tin. Top with a swirl of whipped cream. Place another cookie on top. Freeze. Store in an airtight container in the freezer.
