The Best Slow Cooker Shredded Chicken

My sweet friend hosted us for a play date over the summer, providing food for the kiddos, and a delicious chicken salad for us mamas. The chicken was so moist and flavorful - I had to know how she made it. She told me she made it in her Instant Pot and that it was just garlic and salt. Mind blown.

So that afternoon I went on to research what kind of Instant Pot I would want because I must make this chicken! Then after getting overwhelmed and deciding I wasn't quite ready to jump on the instant pot train, I thought, surely there is a slow cooker recipe out there that could possibly make something similar. And that is when I found and came up with this amazing slow cooker shredded chicken recipe. It is moist. It is flavorful. It sort of resembles rotisserie. I now make it every few weeks so that I always have chicken for my lunch salads.

Obviously you can use this chicken however you want. It is a great base for just a simple delicious chicken that you can combine into any recipe.


The Best Slow Cooker Shredded Chicken


3 lbs or about 4 large chicken breasts

1 cup of water + 1 teaspoon chicken bouillon (or 1 cup chicken broth)

1 teaspoon salt

1 teaspoon pepper

1 teaspoon garlic powder

1 teaspoon onion powder

 

Place chicken in slow cooker and top with remaining ingredients. Cook on high for 3 hours. 

Remove chicken and shred. Reserve some liquid to add to the chicken if you'd like. Add small amounts of reserved liquid to your liking. I find that this gives it just a little more flavor and keeps it moist.

I divide my chicken up into small bags to keep in the freezer. I portion out what I think would be a couple of days amount at a time so that I use the chicken up before it goes bad.
