Throw Together Greek Salad and Rice


Working from home I often get in a lunch rut.  It is hard to find motivation to cook for one, especially if I can grab some leftovers and just shove something in my face.  So in order to eat healthier and be a bit more intentional I try to make a big batch of something that I can eat all week long.  One of my recent favorites is this Greek salad with rice.


A friend of mine brought a similar combination with her to a play date which inspired me to make this.  It is so simple and I literally dump it all in a bowl.  It lasts at least a week for me (if not more) but it does get watery over time.  Not enough for me to not enjoy it though!  I also occasionally toss in some cooked chicken to add more protein.  I have it on my to do list to also try it with quinoa for it's added protein.


Greek Salad with Rice

-Tomatoes
-Cucumber
-Onion
-Kalamata Olives
-Feta Cheese
-Garlic Powder
-Herbs de Provence
-Cooked Rice

Toss all ingredients in a bowl and mix!  I use the seasonings to taste.  A few shakes is usually good and then I add more as I need it.

Put it in a tortilla.  Throw some on top of lettuce.  Add some chicken.  The options are endless!

*The Herbs de Provence is from a tomato recipe my friend made once.  Toss cherry tomatoes with a little water, garlic powder, and Herbs de Provence.  And then eat!  So good!  I am not an eat a tomato all by itself girl but this is an exception!  So yummy!
