Oven Baked Tortilla and Tostada Shells

We are big taco fans.  Big Mexican food fans really.  Have you ever had homemade fried tortilla shells?  Oh my goodness.  It's pretty much the best.  But it's probably not the best for you.  So I decided to try making some baked taco shells instead.  The result?  Utter delicious insanity!  It is like devouring Mexican food goodness but on a weeknight and at home.  Without all the guilt.  That, my friend, is perfection.

It really is so easy and you don't have to deal with the splattering grease of frying.  Simply spray your tortillas on both sides with cooking spray.  I personally prefer using canola oil in my Misto Sprayer -- this guy is better on the environment because you are not throwing a bunch of empty cans away plus it is cheaper to buy the oil in a bottle and fill up.  Then you bake.  For 10 minutes.  You can mix up a bowl of guacamole while it cooks.

So so good.  It's all flaky and hot.  Way better than microwaved tortillas.  Or heaven forbid...room temperature ones!  wink.

We like to fill ours with ground turkey with taco seasoning, breaded fish, or some slow cooked chicken and salsa.

I am a big fan of the tostada shell.  I like to pile on the ingredients making for one hearty tostada versus two regular sized tacos.  Plenty of deliciousness but less carbs.

My husband prefers the tacos.  Either way you cannot go wrong.
